Fresh chicken eggs (no, these are not dyed Easter eggs) from my boss. He raises a few chickens & since we are back into spring; the days are longer.. which means that the hens are more productive - which means my boss is conveniently giving away these beauties to me & my crew often! What a lovely work perk. It's just so wonderful to know that these eggs are from happy hens (that have names), running amuck less than 10 miles from where I live. Not to mention, how delicious these are! Sunny-side up, poached.. Over-easy. So good! Needless to say, they brighten my day every time they are brought in. In fact, the first time they were brought in, I nearly cried from excitement. .. I can't explain why I love them so. If we ever get a chance to live somewhere that had the adequate amount of space; I'd love to raise chickens. How do you like your eggs?
